Did you know March is National Celery Month?! 

Famous for its satisfying crunch and refreshing taste, celery is rich in vitamins A, K, and C, and minerals like potassium and folate; plus, this low calorie snack packed with antioxidants that can boost both short and long-term health.

Need some inspiration? Follow these quick and tasty celery-themed recipes!

 Vegan Cream Cheese Celery Sticks 

Cutting carbs? You don’t need to sacrifice the  delectable creaminess of a cream cheese bagel with this super simple breakfast recipe! 

Ingredients: 

     Celery 

     Vegan Cream Cheese 

     Paprika 

     Honey 

     Salt & Pepper 

Directions: 

Wash and dry celery stalk. Cut into individual sticks.Spread vegan cream cheese in the boat section of each stalk. Drizzle honey over cream cheese. Season with paprika, salt and pepper! 

Ants on a Log

This is a timeless snack with our own tasty twist that will keep your kiddos wanting more! For your little ones, chop the celery into bite sized ‘logs’ to make it easier to snack on. Opt for hemp seed butter, (recommended by Purium Co-founder Dave Sandoval) as a far healthier alternative to peanut butter for its powerful anti-inflammatory and antioxidant properties. 

Ingredients:

     Celery

     Hemp Seed Butter  

     Raisins or Dried Cranberries 

     Cacao Nibs 

     Honey 

     Optional: Sliced Almonds or Chopped Peanuts 

Directions: 

Cut Celery into singular stalks. Spread 1-2 TBSP of Hemp Seed Butter on the inside of each stalk. Place a row of raisins or dried cranberries on top of the almond butter. Sprinkle cacao nibs on top to satisfy your sweet tooth. Add sliced almonds or chopped peanuts for an extra crunch! Drizzle with honey to top it off. 

Celery Flex Food Snacks/Meals for the ULT:

Compliment celery’s crunchiness with this healthy alternative to ranch dressing: creamy avocado dip. Make a whole veggie plate with cauliflower and cucumbers too! 

Ingredients: 

     1 Avocado 

     ¼ Cup Almond Milk, 

     Garlic

     Onion Powder

     Dill

     Parsley 

     Sea Salt 

Directions: 

Peel and de-pit avocado and blend with almond milk, garlic, onion powder, dill, sea salt and parsley. Pour into a small dish and dunk your celery sticks in! 

Hot Veggie Soup 

“The shakes and supplements keep me going throughout the day but by 5pm I just wanted something warm and satisfying.” says Suzanne Murphy who relied on this hearty comfort soup to carry her through the ULT. 

Ingredients: 

     1 large Broccoli Floret

     1 large Cauliflower Floret 

     Chopped Carrots

     Celery 

     Garlic Powder

     Himalayan salt

     Red Pepper Flakes

     Onion Powder 

     1 Avocado

Directions: 

Put chopped broccoli, cauliflower and  carrots into a pot. Dice celery and season with garlic powder, Himalayan salt, red pepper flakes, onion powder and add to the pot. Simmer in a veggie broth until veggies are tender. Once cooked, add to a blender with avocado and blend until smooth. Pour into a bowl and enjoy. 

Veggie-loaded Salad

Make lunchtime a nutritious rainbow! Pair celery with other flex foods, and whip up this salad packed with healthy fats, protein, and antioxidants! 

Ingredients: 

     Half an Avocado

     Diced Celery 

     Shredded Carrot 

     Sliced Cucumbers 

     Spinach 

     Can’t Beet This! Dressing

Directions: 

Mix diced avocado, diced celery, shredded carrots, and cucumbers. Serve over a bed of spinach. Drizzle with Can’t Beet This! Dressing!
