Living, organic lettuce is supposed to stay fresher a little longer than other lettuce options in the grocery store. It also keeps its great cup shape when you break off the leaves. Depending on your food preference, you can fill that crunchy cup with whatever you please (as long as it’s healthy and organic).
Tuna: In a bowl, combine 1 5-ounce can of tuna (safe catch or wild), 1 avocado, 1 stalk of celery, ½ tomato diced, juice from ½ lemon, a handful of parsley and other veggie preferences (red onion, green pepper, carrots, etc.). Mash it all together and scoop into lettuce cups. Add sea salt and pepper to season.
Veggie: Lay some fresh slices of tomato, avocado and cucumber. Add some micro sprouts, bell pepper or onion. For dressing, squeeze a bit of lemon and drizzle olive oil. Sprinkle with herbs, sea salt and ground pepper before serving.
Turkey: Begin with your organic, minimally processed turkey slices and include any of your favorite veggies. Instead of mayo, try a little Greek yogurt. Sprinkle with herbs, sea salt and ground pepper before serving.
