ATHLETE MEAL: Chimichurri Chicken with Quinoa

In need of a filling, lean protein meal after a hard workout (and post – MVP Sport protein drink)? Check out this deliciously satisfying warm meal, without wasteful calories or bad carbs.

Ingredients for Chimichurri Sauce:

1 bunch organic parsley
8 cloves garlic, minced
3⁄4 cup extra virgin olive oil or Purium Tropic Oil
1⁄4 cup organic apple cider vinegar
1 organic lemon wedge (juice of)
1 tablespoon diced organic red onion
1 teaspoon dried organic oregano
1⁄2 teaspoon sea salt

Directions for Chimichurri Sauce:

Pulse parsley in food processor until finely chopped. Then add in other ingredients                                            until desired texture is reached.

Meal Ingredients:

Organic cage-free chicken breasts
Organic quinoa
Raw organic baby spinach
Organic rainbow carrots
Organic avocado

Meal Directions:
Cook chicken and carrots in frying pan with a little coconut oil until fully cooked.                                          Cook quinoa according to packaging.

Plate:
On a plate, place raw spinach before topping it with quinoa and chicken.                                                            Coat chicken in the Chimichurri sauce. Add carrots and sliced avocados on the side. Enjoy!
