Flex Meal: Faux Fried Potatoes

During a 10-Day Transformation, there may be a certain food that you really miss and just can’t wait to eat when you are done. But if you indulge after the 10 days, doesn’t that kind of defeat the purpose…? Instead of falling back, into bad habits, find a substitute or alternative to the unhealthy food(s) you used to crave. Fried potatoes are a great example of a comfort food that shouldn’t be eaten very often – if at all. Just like potatoes, Jicama is a root vegetable. However, its glycemic index is much lower. Also low in calories, Jicama is an excellent source of prebiotic fiber and a whole food that supports healthy blood sugar levels.

Ingredients:

  • Organic jicama
  • Organic red & yellow bell peppers
  • Organic sweet onions
  • Pink himalayan sea salt
  • Organic lime
  • Organic coconut oil
  • Organic crushed garlic
  • Organic beets

Directions:

Heat up sauce pan with coconut oil. Put in jicama, onions, bell peppers, and garlic. Cook until desired texture is reached. Season with lime juice and salt. Next, place beets in boiling water for 20-30 minutes (until soft). Remove and season with salt. Enjoy.
